Baigan ka bharta(Egg plant,Brinjal)

Ingredients:-

1 brinjal
1 chopped onion
1 chopped tomato
2 chopped green chilli
2 tbsp coriander leaves
1/4 tsp turmeric powder
1/2 tsp red chilli powder
1/2 tsp coriander powder
1/4 tsp cumin seed(zeera)
1/4 tsp asafoetida(heeng)
1 1/2tbsp oil
salt to taste

Method:-


1.Bake on gas for 12-15 minutes until it becomes soft.
2.Peel brinjal and mash well it by spoon and keep aside.
3.Heat oil in a pan and put cumin seed,asafoetida and chopped green chilli.
4.Add chopped onion,turmeric powder,salt and fry for 3-4 minutes.
5.Add chopped tomato,chilli powder,coriander powder and fry for 3-4 minutes.
6.Add mashed brinjal and mix well it then cover with plate for 2-3 minutes and turn off gas.
7.Garnish with coriander leaves.
8.Ready to serve with chapati (roti)
